INGREDIENTS:

2 pkgs mini phyllo shells (15 count)

FILLING

1 (6 oz) container nonfat plain yogurt
1 cup diced strawberries
1/4 cup no-calorie sweetener w/1g of fiber, granulated
1 tsp vanilla extract
1 tsp orange juice

DIRECTIONS:

1. Thaw phyllo shells according to manufacturer’s directions.

2. Mix all filling ingredients together. Refrigerate for 10 minutes.

3. Fill each shell with 2 teaspoons of yogurt mixture.
NOTE:  For best results fill shells just before  serving.

YIELD: 15 Servings.
Serving Size: 2 per serving.

Salad Ingredients: smoked turkey, corn, black beans, tomatoes, cheese and onions on a bed of lettuce drizzled with dressing and a (1-1/2 Cup) serving size. INGREDIENTS:


1 (10 oz) pkg torn Romaine lettuce or (8 cups) torn Romaine
1 cup frozen corn, thawed
1 large tomato, chopped
4-1/2 oz (1/2 of 9 oz pkg) Oscar Mayer (brand) Deli Fresh
Smoked Turkey Breast, coarsely chopped (found in luncheon meat section)

1 (15 oz) can no-salt-added black beans, rinsed
1 cup shredded 2% sharp Cheddar cheese
1/2 cup chopped red onions
1/2 cup light Ranch salad dressing
1/2 cup thick & chunky style salsa

DIRECTIONS:

1. Cover platter with lettuce; arrange next 6 ingredients in rows over lettuce.

2. Mix together dressing and salsa; drizzle over salad just before serving.

Yield: 8 Servings.
Serving Size: 1-1/2 cups per serving.

WW Crockpot Chicken Chili WW Plus+ = 4


Ingredients

Non-stick cooking spray
(12 oz) boneless, skinless chicken breasts, diced
1 (1.5 oz) envelope chili seasoning
1 (28 oz) can diced tomatoes with liquid
1 (15.25 oz) can whole kernel corn, drained
1 (15.25 oz) can kidney or red beans, drained
1 green bell pepper, chopped
1 onion, chopped
1/2 cup salsa
1 cup water


Directions:

1. In a skillet cook chicken just until seared.

2. Spray crock pot with non-stick cooking spray.
Add chicken and all other ingredients to crock pot and mix well.

3. Cover and cook on LOW 6 to 8 hours.

Yield: 8 servings
Serving Size: 1-1/2 cups per serving.
