Ingredients:

1/2 of (8 oz) pkg. Neufachel cream cheese, softened
4 oz soft Chevre (goat cheese)
1 tbsp skim milk
1 small clove garlic, minced
1/4 tsp ground black pepper
1/2 cup roasted red sweet peppers,
drained and finely chopped
1/4 cup snipped fresh basil
8 (8 inch) whole wheat or plain flour tortillas
2 cups, packed, fresh spinach leaves

Directions:

1. For Filling:

In a medium size bowl, beat cream cheese with an electric mixer on medium to high speed for 30 seconds. Add goat cheese, milk, garlic and black pepper; beat until smooth. Stir in red peppers and basil.

2. To Assemble:

Divide filling among tortillas, spreading to within 1/2 inch of the edges.
Arrange spinach leaves over filling to cover. Carefully roll tortillas up tightly. Cover and chill roll ups for 2 to 24 hours. Tote in an insulated container with ice packs.

3. Using a sharp knife, cut roll ups crosswise into 48 pieces.

Yield: 24 servings ( 2 Roll Ups Per Serving)

INGREDIENTS:

1 (8 oz) bar Neufchatel cheese, softened
2 cups skim milk, divided
1 (4-serving size) box fat-free, sugar-free instant pudding mix
1 (8 oz) tub fat-free frozen whipped topping, thawed
1 (20 oz) can crushed pineapple in juice, undrained
1 (12 oz) pkg frozen red raspberries, thawed
1 (8.5 oz) angel food cake, cut into 3/4-inch cubes


DIRECTIONS:

1. Beat Neufchatel in a large bowl with electric mixer on low speed until smooth. Gradually add 1/2 cup of the milk, mixing until well blended. Add remaining 1-1/2 cups milk and pudding mix. Beat on low speed 2 minutes or until well blended. Gently stir in whipped topping.

2. In a seperate bowl; mix together the raspberries and pineapple.

3. Arrange 1/3 of the cake cubes in a 3 quart serving bowl; cover with layers of 1/3 each of the fruit and pudding mixtures. Repeat all layers 2 more times. Refrigerate until ready to serve.

YIELD: 12 Servings

Ingredients:

Non-stick cooking spray
(12 oz) boneless, skinless chicken breasts, diced
1 (1.5 oz) envelope chili seasoning
1 (28 oz) can diced tomatoes with liquid
1 (15.25 oz) can whole kernel corn, drained
1 (15.25 oz) can kidney or red beans, drained
1 green bell pepper, chopped
1 onion, chopped
1/2 cup salsa
1 cup water

Directions:

1. In a skillet cook chicken just until seared.

2. Spray crock pot with non-stick cooking spray.
Add chicken and all other ingredients to crock pot and mix well.

3. Cover and cook on LOW 6 to 8 hours.


Yield: 8 servings
Serving Size: 1-1/2 cups per serving.

Ingredients:

4 large eggs
2 large egg whites, boil these as whole eggs and discard the yolks
2 tablespoons fresh chives, chopped
2 tablespoons reduced-calorie mayonnaise
1/2 teaspoon Dijon mustard
1/2 teaspoon table salt
dill
1/4 teaspoon black pepper, freshly ground

Directions:

1. Place eggs in a medium saucepan and pour in enough water to cover them; set pan over high heat and bring to a boil.
2. Boil 10 minutes; drain and place eggs in an ice-water bath.
3. When eggs are cool enough to handle, remove shells.
4. Discard yolks from two of the eggs. Cut remaining whole eggs and whites into 1/2-inch pieces (or use an egg slicer).
5. Transfer eggs to a medium bowl. Add chives, mayonnaise, mustard, dill, salt and pepper; mix until blended.


Makes 4 (1/2 Cup Servings)

This colorful, low fat, high fiber salad was a real hit when I first tested it on my girlfriends when they came over for dinner. I knew they really liked it when they all asked for the recipe!  It’s so easy to make, super satisfying and chock full of yummy Italian flavors. I especially love the flavor of the peperoncinis in this salad. They give it a little zip! The skinny for 1 main course salad, 171 calories, 5 grams of fat and 4 Weight Watchers POINTS PLUS.

Prep Time: 15 minutes


Ingredients

1 bag romaine lettuce

3 cups fresh spinach, (from a bag) chopped

1½ cups (6 ounces) diced cooked turkey breast, see shopping tip

1½ cups fresh cherry or grape tomatoes, sliced int half or tomatoes chopped

½ cup red onions, diced

½ cup peperoncini or banana pepper, sliced, see shopping tip

1 (2¼ oz) small can black olives, sliced

1 cup white kidney beans (cannellini beans) rinsed and drained

1 cup yellow bell peppers, diced

1 cup red bell peppers, diced

½ cup plus 2 tablespoons Girards Light Caesar or Champagne dressing, Cardini’s Light Caesar vinaigrette or your favorite light Italian-style dressing

6 tablespoon Parmesan cheese, shredded or grated, optional

Instructions

1. In a large bowl, add all salad ingredients except salad dressing and cheese. Refrigerate until ready to serve.

2. To serve: toss in dressing and divide among 6 plates. Sprinkle each salad with 1 tablespoon Parmesan, if desired

They are in the same botanical family as bell peppers and many other hotter varieties of chili peppers.  Most of us know peperoncinis as pickled peppers, which are preserved in vinegar in commercially packaged jars. Banana peppers or yellow wax peppers may also be sold as peperoncini.

Kidney beans that are white in color are known as cannellini beans.

Thin pizza crusts are so popular these days. So what better thing to use for ease and to make it healthier than a whole grain flour or whole wheat tortilla for the crust! This New pizza makes such an easy weeknight dinner the whole family will love.  Serve with a salad and you’re all set. Each yummy pizza has 330 calories, 7 grams of fat and 8 Weight Watchers POINTS PLUS. Each pizza even has 6 grams of fiber! 


Prep Time: 12 minutes
Cook Time: 4 minutes


Ingredients


2 whole grain flour tortillas or whole wheat, see shopping tip

1 cup onions, thinly sliced

⅔ cup chicken, cooked and diced into small pieces

¼ cup barbecue sauce, I like Sweet Baby Rays or Bull’s Eye

1 teaspoon balsamic vinegar

½ cup cherry or grape tomatoes, sliced

6 tablespoons light mozzarella cheese

1 tablespoon Parmesan cheese

Instructions

1. Place tortillas under broiler for about 1-2 minutes to toast, turn over and broil 1 more minute to toast other sides. Keep an eye on them so they don’t burn. Remove from oven and set aside.

2. Place sliced onions on a microwave safe plate and cook in microwave for 2 minutes to soften.

3. Add chicken to a small bowl. Toss with 3 tablespoons barbecue sauce and balsamic vinegar.

4. To Assemble Pizza: Spread each tortilla with ½ tablespoon barbecue sauce. Use the back of a spoon to spread. Top each with ½ of chicken/barbecue sauce mixture and spread around. Place ½ of the onions all over the top of each pizza. Sprinkle each with ¼ cup tomatoes. Finally, top each with 3 tablespoons light mozzarella cheese and ½ tablespoon Parmesan cheese.

5. Place on a baking sheet and broil for about 1-2 minutes until cheese is melted and tortilla is browned. Keep an eye on them so they don’t burn.

6. Remove from oven. Place each on a dinner plate. Pull apart with your hands into pieces to eat or serve with a fork and sharp knife, if desired.

Makes 2 tortilla pizzas (this recipe can easily doubled, tripled and so on)

Ingredients:

8 ounces turkey breakfast sausage,
removed from casing and crumbled into small pieces
1 teaspoon extra-virgin olive oil
8 ounces mushrooms, sliced
1/4 cup sliced scallions
1/4 cup shredded Swiss cheese
1 teaspoon freshly ground pepper
5 eggs
3 egg whites
1 cup 1% milk


Directions:

Position rack in center of oven; preheat to 325°F. Coat a nonstick muffin tin generously with cooking spray (see Tip).

Heat a large nonstick skillet over medium-high heat. Add sausage and cook until golden brown, 6 to 8 minutes. Transfer to a bowl to cool. Add oil to the pan. Add mushrooms and cook, stirring often, until golden brown, 5 to 7 minutes. Transfer mushrooms to the bowl with the sausage. Let cool for 5 minutes. Stir in scallions, cheese and pepper.

Whisk eggs, egg whites and milk in a medium bowl. Divide the egg mixture evenly among the prepared muffin cups. Sprinkle a heaping tablespoon of the sausage mixture into each cup.

Bake until the tops are just beginning to brown, 25 minutes. Let cool on a wire rack for 5 minutes. Place a rack on top of the pan, flip it over and turn the quiches out onto the rack. Turn upright and let cool completely.

Makes 12 Servings (1 Quiche Per Serving)

Maybe the traditional cabbage rolls recipe will be forgotten about after you try this. Makes 8 generous 1-1/2 cup servings.


Ingredients:

8 cups shredded cabbage (about 1 large head)
2 onions, chopped
1/4 cup Italian salad dressing
1 lb extra-lean ground beef
2 cups instant brown rice, uncooked
2 (10.75 oz) cans reduced-sodium condensed tomato soup
2 soup cans water

Directions:

1. Preheat oven to 350° F.

2. Cook and stir cabbage, onions and salad dressing in a large skillet over medium heat 5 to 10 minutes or until tender. Remove from skillet.

3. Brown the meat in the same skillet. Stir in rice, soup and water until blended. Layer 1/3 of the cabbage mixture then 1/2 the meat mixture in a 13 x 9 inch baking dish. Repeat layers; top with remaining cabbage mixture. Cover and bake for 1 hour.



Yield: 8 Servings
