Ingredients:

1/4 cup Italian salad dreaaing
3/4 lb boneless, skinless chicken breasts,
cut into bite-size pieces

1 onion, chopped
1/2 of (14-1/2-oz can) stewed tomatoes, undrained
1 (14-1/2 oz) can fat-free reduced-sodium chicken broth
1-1/4 cups water
1(8-1/2 oz) can peas and diced carrots, drained
1 tsp chili powder
1/2 cup Mexican style fine shred four cheese blend
Tortilla chips, optional

Directions:

1. Heat the dressing in a large saucepan over medium-high heat. Add in chicken and onions; cook 5 minutes stirring occasionally.

2. Add in the tomatoes, broth, water, peas and carrots and chili powder; stir. Bring to a boil. Reduce heat to medium; simmer 8 minutes or until chicken is cooked through and onions are tender. Meanwhile, preheat the broiler.

3. Divide and ladle soup equally into four ovenproof serving bowls; top with cheese.
Broil, 6 inches from heat source, 2 to 3 minutes or until cheese is melted. Top with crushed tortilla chips if desired.


Yield: 4 Servings
Serving Size: 2-1/2 cups per serving
