Angel Food-Lush Cupcakes is a delicious, light cupcake recipe. It’s a low fat, low cholesterol, low sodium, low carbohydrate, Diabetic and a Weight Watchers (2) PointsPlus+ recipe. Healthy and delicious. Would be a great recipe for Easter. Everyone, especially the youngsters, will love these Angel Food-Lush Cupcakes.

Ingredients:angel-food-lush-cupcakes

1 (16 oz) box Angel Food cake mix
1 (3.4 oz) box vanilla flavor instant pudding mix
2 (8 oz) cans crushed pineapple in juice, undrained
1 cup thawed frozen whipped topping
2 cups assorted fresh berries (blueberries, raspberries & sliced strawberries)

Directions:

1. Preheat oven to 375º F.

2. Prepare cake batter as directed on package; pour into 30 paper-lined muffin cups, filling each cup 2/3 full. Bake 12 to 15 minutes or until tops are golden brown and cracks feel dry. (Note: If baking in batches, refrigerate remaining batter in bowl until ready to pour into lined muffin cups and bake.) Cool cupcakes in pans 10 minutes; remove to wire racks. Cool completely.

3. Mix dry pudding mix and pineapple together in a medium size bowl. Gently stir in whipped topping; spread onto cupcakes. Top with berries.


Yield: 30 Cupcakes
