This NEW chicken recipe has a wonderful pepperoni pizza flavor. And with just 5 ingredients, it doesn’t get easier to make! Perfect for a quick weeknight dinner. Each serving has 229 calories, 7 grams of fat and 6 Weight Watchers POINTS PLUS.

Prep Time: 10 minutes

Bake Time: 25 minutes

Ingredients

⅔ cup onions, diced

1⅓ cup pizza sauce or pasta sauce, see shopping tips

8 slices Hormel’s 70% less fat turkey pepperoni, cut each into pieces, see shopping tips

4 chicken breasts (4 ounces each) pounded thiner, see shopping tips

1 cup reduced-fat mozzarella cheese, shredded

Instructions

1. Preheat oven to 350 degrees. Coat a baking pan with cooking spray.

2. Place onions in a small microwave safe bowl.  Cook in microwave for about 1 minute to soften. Mix onions into pizza sauce.

3. Place chicken breasts in pan. Top each breast with ⅓ cup pizza sauce. Place 2 slices of chopped pepperoni slices on top of each chicken breast.  Sprinkle each with ¼ cup cheese.

4. Place pan in oven and bake for about 25-30 minutes until chicken is cooked through.

Makes 4 servings. Each serving 1 breast.


Shopping Tips
There are several brands of jarred pizza or pasta sauce. I usually use Ragu’s or Prego’s.

I used Hormel’s 70% reduced-fat turkey pepperoni. You’ll find it in the luncheon meat section of most supermarkets. It’s so low in calories and fat compared to regular pepperoni. One serving (17 slices) has 70 calories and 4 grams of fat.

Many supermarkets sell packages of thin chicken breast breasts. I bought mine at Trader Joe’s. Or pound your own by placing each chicken breast between 2 slices of waxed paper or plastic wrap. Pound with a meat mallet or back of a wooden spoon until each breast is thiner.
