Raspberry Pavlova

Raspberry Pavlova is a delicious creamy Australian dessert recipe. A layered dessert using a crisp meringue base with creamy pudding and topped with raspberries that also makes a beautiful presentation. INGREDIENTS:

4 egg whites
1/4 tsp cream of tartar
1 cup granulated sugar
1 (1 oz) box fat-free sugar-free vanilla instant pudding
1-1/2 cups cold skim milk
1 cup thawed sugar-free whipped topping
2 cups fresh raspberries
2 tbsp powdered sugar

DIRECTIONS:

1. Preheat oven to 200º F.

2. Beat egg whites and cream of tartar in a medium size bowl with mixer on high speed 5 minutes or until soft peaks form. Add granulated sugar, 1 Tbsp. at a time, beating until stiff peaks form.

3. Spread into a 10-inch circle on parchment-covered baking sheet, indenting center slightly. Bake 1-1/2 hours. Cool completely.

4. Meanwhile, beat pudding mix and milk in a medium size bowl with whisk 2 minutes Stir in  whipped topping. Refrigerate 15 minutes.

5. Place meringue on plate just before serving; fill center with pudding mixture. Top with berries; sprinkle with powdered sugar.


Yield: 12 servings.
